Spicy and sweet mixed nuts

My recipe for spicy sweet mixed nuts is the perfect way to use up leftovers from the holidays. You can use any combination of nuts or stick to one type. Easy to make and a tasty snack for any time of the day.

Ingredients to make spicy sweet nuts

  • 3 tbsp of runny honey
  • 2 tsps of chilli flakes (more if you like it spicier!)
  • 1kg mixed unsalted nuts
  • 2 tsps sea salt
  • 50g of unsalted butter

Method

In a large metal baking tray toast the nuts in the oven. Set the oven for 200c and keep an eye on them. You are aiming for just browning and warming. It usually takes about 15 minutes but do not forget them!

You can do this under a grill or in a pan but I find the oven is easier. Whilst the nuts are toasting melt the butter and mix with the honey.

Once the nuts are ready remove from the oven and drizzle over the honey and melted butter. Mix together with a large metal spoon and then spread back out on the baking tray.

Sprinkle over the chili and salt and leave to cool. Be sure to mix and turn over at least twice whilst cooling to stop the nuts all sticking together.

This is a basic recipe and I have added all sorts to it over the years.

Try leaving out the chili and replacing with brown sugar and cinnamon or replace honey with maple syrup. You could try rosemary and sea salt or salt and black pepper. Add in some seeds, sunflower, pumpkin or pine nuts. Or add sesame seeds whilst the honey is still warm. If you go for a sweet only version you can crush up the nuts once they are cool and sprinkle over muesli or yoghurt. The options are endless…………………………..
