A peaceful culinary escape to a traditionally built wooden lodge hidden on the quiet side of the delta. This secret paradise opens its doors exclusively for Volkan’s Adventures guests. Here, you will enjoy authentic regional dishes slow-cooked with deep care in a traditional wood-fired oven, hosted by a local family dedicated to preserving the true flavors of our heritage.
Overview
Some hours are best spent simply watching the world go by. On the quieter Çandır side of the delta, entirely away from the bustling center of Dalyan, sits a beautiful, traditionally built all-wood lodge overlooking the magnificent Dalyan Delta.
The family who owns this hidden gem are master chefs who have made traditional Turkish flavors their lifestyle. Rather than a standard commercial restaurant visit, they open their private home-terrace to give our guests a genuinely relaxed, unhurried dining experience. Here, you will taste legendary Ottoman-inspired recipes slow-cooked for 4 to 5 hours in a brick wood oven. No crowds, no routine—just an authentic heritage meal and a panoramic view of the delta that feels entirely yours. It is the kind of experience that feels wonderfully timeless at the time, but stays with you long after you return home.
The Luxury of Exclusivity
A Rare Culinary Privilege: Because true heritage cooking cannot be rushed, these master dishes require 4 to 5 hours of slow, meticulous preparation in the wood oven. Consequently, this feast is prepared in strictly limited quantities each day. Only 12 to 18 exclusive guests per day will have the privilege of pulling up a chair to this table.

The Menu: Traditional Wood-Fired Cookery 🥘
A meal that reflects the patience, heritage, and rich history of the land it overlooks. This traditional fixed-menu is designed to showcase rare regional specialties and authentic flavors:
- A Selection of Ottoman-Inspired Mezes: A rotating seasonal selection of refreshing, vibrant regional mezes and olive-oil dishes crafted with fresh garden ingredients and local herbs, curated daily by the family kitchen.
Tongu Pide: Tongu Pide: A spectacular, wood-fired local delicacy inspired by a legendary, 200-year-old heritage recipe. Originating from the Izmir region, the historic bakery that famously put this precise style of pide on the map has recently been honored with a prestigious Michelin recognition—serving this iconic food as a celebrated masterclass in Aegean baking. Our hosts recreate that exact historic magic right here in our wood oven.
Signature Main – Chicken Topkapı: A rich, aromatic masterpiece deeply rooted in traditional Ottoman palace cuisine. This historic dish features tender chicken expertly wood-fired to a perfect golden finish, elegantly filled with a luxurious, fragrant inner rice (iç pilav) studded with sweet currants, buttery pine nuts, and toasted almonds. It is a true taste of royalty, meticulously prepared over hours just for our exclusive table.
The Vegetarian/Vegan Premium Alternative: An equally majestic, slow-baked masterpiece designed to rival the palace main course. This dish features the very same luxurious, fragrant Ottoman inner rice (iç pilav)—perfumed with sweet currants, pine nuts, and almonds—beautifully layered with thick, tender slices of locally sourced garden vegetables. Crowned with a rich, velvety, golden-baked béchamel sauce, the entire creation is placed deep into the brick wood oven to slowly bake together, allowing the creamy top and the savory layers below to beautifully bubble and infuse with the smoky wood-fire aromas. (Vegan option prepared with a plant-based olive oil and almond milk béchamel style).
Note: Please advise our team of any specific dietary requirements or allergies at the time of booking so the family can prepare your bespoke alternative in the wood oven.
