Menemen – the best breakfast yet…….
- 1 red pepper, finely chopped
- 1 green pepper, finely chopped
- 1 large onion, finely sliced
- 4 medium tomatoes, finely diced
- 8 eggs
- 1 tablespoon olive oil
- 1-2 teaspoon red pepper flakes
- Salt and Pepper to taste
Heat the olive oil in a frying pan then fry the pepper and onions. Cook until softened. Add the tomatoes and red pepper flakes, mix well. Crack the eggs in a bowl and whisk . Stir in the egg mixture to the frying pan and give it a good stir. Scramble the eggs until they are just done. Remember that the heat from the pan will continue to cook the eggs. Season with salt and ground black pepper to taste.
There are many varieties of this dish but this is the base to start from. You can add Turkish sausage (sucuk), spinach, mixed vegetables, ground beef or lamb, hot chili peppers, and feta cheese. If you have any leftover courgette fritters they make a great accompaniment.
