Courgette Fritters

These courgette fritters are perfect as mezze or a snack. I have added red pepper flakes to my recipe as I like the kick it gives but this is not traditional!

Recipe

  • 3 courgettes
  • 150 gr  Turkish white cheese or feta cheese
  • 1/2 medium onion
  • 3 spring onions
  • 3 garlic cloves
  • 1 bunch dillimages
  • 3 eggs, beaten
  • 3 tablespoons all purpose plain flour
  • Pinch of paprika
  • Pinch of red pepper flakes
  • Sunflower or vegetable for shallow frying

Method

Grate the courgettes and leave to drain in a colander. Sprinkle with a pinch of salt.

Season well with black pepper. You probably won’t need salt as the cheese will be quite salty.

Heat the oil in a frying pan and drop in small dollops of the mixture. Don’t overload the pan. Little and often is the way to go! Fry until golden brown on each side and drain on kitchen paper.

These are very good straight away but equally nice as cold leftovers. Serve with yoghurt or good with Turkish hummus. The perfect way to use up all of those summer courgettes. In the local restaurants in Akyaka all of the neighbours bring in dıfferent mezzes. These are always a favorite.
